Recipe: 4 Star Baked Ziti

Recipe: 4 Star Baked Ziti
This is a great dish to throw together on a cold night. --- coats the bones! It can be as easy or complicated as you want. Feeling lazy, use jar sauce, feeling like Emeril, make your own.
INGREDIENTS:
1 (16 ounce) package ziti pasta
24 ounces ricotta cheese
1 pound shredded mozzarella
cheese
1 egg, beaten
spaghetti sauce
1/4 cup grated Parmesan
cheese
DIRECTIONS:
1. Bring a large pot of lightly salted water to a boil. Add ziti and cook for 8 to 10 minutes or until al dente; drain and rinse.
2. In a medium bowl, mix ziti, ricotta cheese, mozzarella cheese, egg and 1 1/2 cups spaghetti sauce.
3. Preheat oven to 375 degrees F (190 degrees C).
4. Lightly grease a 9x13 inch baking dish and spoon in ziti mixture. Top with remaining spaghetti sauce, followed by Parmesan cheese.
5. Bake in preheated oven for 30 minutes; let stand for 15 minutes before serving.

Recipe: Great Like Walmart Sugar Cookies

Great Like Walmart SUGAR COOKIES
INGREDIENTS:
1 1/2 cups butter, softened
2 cups white sugar
4 eggs
1 1/2 teaspoon vanilla extract
5 cups all-purpose flour
2 1/2 teaspoons baking powder
1 teaspoon salt
DIRECTIONS:
1. In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
2. Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
3. Bake 6 to 8 minutes in preheated oven. Cool completely.

...So, I originally took it as an insult when one of my friends told me "THEY TASTE JUST LIKE WALMART COOKIES!" Then she kept asking me to make them, so I got over it. I'll post the frosting soon!

Recipe: 4 Star Bread Pudding with Whiskey Sauce



A permanent fixture in my life from
my days in Texas. This is the most
AMAZING bread pudding
--- I could eat the whole pan!


Bread Pudding with Whiskey Sauce


6 eggs, lightly beaten
1 1/2 cups white sugar
4 cups milk
1 cup heavy cream
1 tablespoon vanilla extract
1/2 tablespoon ground
cinnamon
1 (1 pound) loaf bread, cut into
1 inch cubes

1 1/2 cups white sugar
3/4 cup butter
3/4 cup corn syrup
1/3 cup whiskey
DIRECTIONS:
1. Preheat oven to 300 degrees F (150 degrees C).
2. In a medium bowl, whip together eggs and sugar. Mix in milk, heavy cream, vanilla extract and cinnamon. Whip until smooth.
3. Arrange bread cubes in a medium baking dish. Cover with the whipped mixture. Allow the bread to become saturated with the mixture.
4. Bake 45 minutes in the preheated oven, until lightly browned.
5. To make the sauce, mix sugar, butter and corn syrup in a medium saucepan over low heat. Remove from heat when thoroughly blended, and whisk in the whiskey. Serve warm over bread pudding.

Recipe: Incredible Pancakes


I adapeded this recipe from one in Bon Appetite. It's simply fabulous! Of course at my house we add chocolate chips to EVERYTHING!


INCREDIBLE PANCAKES

Vary these pancakes, if desired, by sprinkling one-fourth cup blueberries, raspberries or even chocolate chips over each pancake before turning it to finish cooking.



3 large eggs
1/2 cup sugar
1 stick butter, melted
1 1/2 cups all purpose flour
1 cup milk
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla

Butter
Warm maple syrup


Preheat oven to 250°F. Whisk eggs, sugar and melted butter in medium bowl until blended. Add flour alternately with milk in 3 additions, whisking to blend after each addition. Whisk in baking powder and salt. Melt enough butter in heavy medium nonstick skillet over medium heat just to coat bottom. Ladle batter into skillet, rotating skillet to spread batter to about 6-inch-diameter round. Cook pancake until bubbles form on surface and bottom is brown, about 1 minute. Turn over pancake and cook until bottom is brown and pancake is cooked through, about 1 minute. Transfer to large baking sheet. Place in oven to keep warm. Repeat with remaining batter. MMMMM
